Minni cheese cakes with stevia

Try our homemade liquid stevia solution to make these sweet little cheesecakes and you might become hooked on stevia forever. The cakes are moist, creamy, and flavorful. But most of all, without adding any sugar at all to the cheese filling, they taste sweet and tangy.

The key to using stevia is to get the exact right amount for each recipe. Too much stevia and the taste is metallic or bitter. Too little, and the taste just isn’t sweet enough.

The simplest way to get it right is to make your own liquid stevia solution from 100% pure stevia powder so that it delivers the same sweetness every time, spoonful for spoonful, as sugar. Through trial and error, I’ve found something that works for me. If it doesn’t work for you, you will know how to tweek things to get it just how you like it.

Homemade liquid stevia solution

  • 1/4 teaspoon 100% stevia powder from concentrate (in Canada, I use New Roots)
  • 1/2 cup filtered or distilled water
  1. Heat the water in a small heat-proof bowl in the microwave (about 20 seconds on high).
  2. Gently stir in the powder until it dissolves. It clumps at first, but within a minute or so you have a colorless solution.
  3. With a funnel, pour the liquid stevia solution into a small dark-brown, glass bottle. Store it in a cool place or in the fridge for a longer shelf-life.

Be accurate when measuring the stevia powder. Over-fill the measuring spoon, then use a knife to smooth the top of the powder to the lip of the spoon. Push the excess back into its container.

Mini cheesecakes sweetened with stevia
Makes 9 individual servings

  • 4 small shortbread cookies, crushed
  • 1 package (250 grams) light Philadelphia Cream Cheese Spread, softened
  • 1 cup low fat cottage cheese (I used 2%)
  • 1/4 cup light sour cream
  • 1 teaspoon cornstarch
  • 1 teaspoon liquid vanilla
  • I egg, lightly beaten
  • 3 tablespoons homemade liquid stevia solution
  • 3 tablespoons low-sugar fruit jelly or jam (I used red current jelly)

This easy recipe requires a few simple tools

Let’s get cooking!

  1. Heat oven to 350F.
  2. Put nine paper muffin liners in a muffin tin and sprinkle about 1 tablespoon of crushed cookie crumbs evenly in the bottom of each one.
  3. Beat the cream cheese with the cottage cheese until it is smoothly blended.
  4. Add the sour cream, vanilla and corn starch and beat again until well blended.
  5. Add 3 tablespoons homemade liquid stevia solution to an egg in small bowl and beat gently. Then add it to the cheese mixture and beat briefly, just until blended. Wipe down the sides of the bowl with the spatula and blend.
  6. Spoon the batter into the paper cups. Fill each one nearly to the top. You should have enough for nine little cakes.
  7. Bake 30 minutes or until the  centers are nearly set. It is better to under-cook than to over-cook. Some of the edges might just start to become brown.
  8. Cool completely, then refridgerate 3 hours.

Straight from the oven.

 

To serve

  1. Microwave the jam or jelly for 20 seconds or so in a small dish until it melts.
  2. Carefully take the paper liners off the cakes and place each one on a serving plate.
  3. Spoon 1 teaspoon of the melted jelly on each cake, to decorate.

Melt some jam or jelly in the microwave and decorate each cake with a little of it.

Nutrition value

Nutrients in each serving: 135 calories, 11 grams carbohydrates of which 6 grams are sugar; 7 grams protein, 7 grams fat of which 3 grams are saturated fats, 56 milligrams calcium. Folate, vitamin A and a few other vitamins and minerals are also present in small amounts.

For diabetics, note that the sugar comes mainly from the cookie crumbs and the jam. Use a sugar-free cereal and a low sugar jam instead,  to reduce the sugar even further.
